Sustainability Meets the Height of Luxury at Château Troplong Mondot, Bordeaux.

We had a landmark year in 2023 of sustainability achievements at Château Troplong Mondot, the Premier Grand Cru wine estate and boutique hotel in Bordeaux that embodies an intentional commitment to environmental stewardship.

As a steadfast advocate of sustainable practices, an understanding of the environmental impact of the estate is the axis on which pivots every decision made by the estate—from the choice of animals that reside on the estate down to the zero single-use plastic policy shared with all their suppliers.

Last year, the Château not only celebrated 30 years of insecticide- and herbicide- free cultivation, but also transitioned to being fully plowed by its resident twelve horses that roam the vineyard between March and November. The integral role that animals play on the estate runs from these beloved horses down to the Indian runner ducks, left in the gardens to eat the slugs at leisure, whilst the pigs and chickens gobble up all organic waste.

Château Troplong Mondot’s destination restaurant, Les Belles Perdrix, boasts Chef David Charrier’s innovative cuisine and hyper-seasonal menus that capitalize on the season’s best picks from the kitchen garden and sourced produce from handpicked local suppliers. The restaurant has fast become the most sought-after table in the area and has been awarded both a Michelin Star and a Green Star in recognition of its sustainable methods. Day visitors and guests of the hotel seeking a more intimate experience can take advantage of the private Chef’s Table, hosted on Thursdays only, where Chef Charrier will reveal the art of preparing a Michelin Star meal at close quarters, indulging guests in off-menu dishes that are entirely guided by what is in season on the day.

Elsewhere, the estate’s compassion for the land is evident from the winemaking process to the thoughtfully designed ecology-chic rooms, which harness the power of the surrounding green landscape. The properties, which include the magnificent white stone country house The Keys and the more secluded Vineyard House, embrace the utilization of vine shoots pruned during winter to provide eco-friendly heating for its buildings.
