Chef Dilling will be hosting a limited series of immersive dining experiences from November 25 to 28, bringing his masterful modern French gastronomy to the Jamaican coast of Montego Bay.
Known for precision, artistry and an unwavering commitment to the finest seasonal ingredients, Chef Dilling broke records when Alex Dilling at Hotel Café Royal achieved two Michelin stars just six months after opening in 2023, the only new United Kingdom restaurant to earn the distinction that year. His culinary approach draws on classical French references to create strikingly modern dishes, earning him a devoted international following and recognition on “The 50 Best” Discovery list in 2024.
