Rucolino is an amaro liqueur singularly Ischian in origin and nearly impossible to find off the island. This distinctive elixir is fashioned from wild arugula, citrus peel, and fragrant herbs, and its combination creates the ideal digestivo. The crafting of Rucolino is a laborious affair, a testament to the islanders’ dedication. The arugula leaves undergo a maceration process in alcohol over several weeks, allowing the herb’s essence to infuse into the spirit gracefully. After, the liquid is slightly sweetened with sugar to achieve a harmonious and unique flavor profile; think herbal, peppery, citrus, and a hint of sweet.
